Twenty-two licensed food trucks took turns lining up along the northwest quad of Monument Circle downtown Friday morning to start serving hungry football fans on the go.
"We are kind of a fusion between Indian and Mexican," said Adam Perry, owner of the Taco Lassi food truck.
"We have the Big Game Rib Tips, the Patriots Jerked Chicken wings, and the Giants Smoked Turkey Legs," said Immanuel Ivey, owner of Ivey Spicy International Food and Catering.
"This is our number one seller. This is the Genie Mac," said Teresa Johnson, owner of the Mac Genie food truck.
She just started her mobile business a month ago just in time for the Super Bowl, and she said she is as prepared as she can be for the big crowds.
"We have stock off-site that we can go get, and we have to go back to our kitchen every single night, cook and reload the whole thing,"
said Johnson.
The trucks will rotate five-hour lunch and dinner shifts through Sunday. Then, their grills will heat back up on Thursday through Super Bowl weekend.
Ryan Edwards has created a mobile version of his family-owned drive-in on the southeast side. He said his grandmother runs all of the operations as she has for years.
"We have about 8,000 to 10,000 tenderloins breaded and ready to go for this week so we have an abundant amount of food, and we're ready to rock and roll," said Ryan Edwards of Edward's Dashboard Diner.
