Tuscan White Bean Artichoke Soup

Ingredients

  • 2 tbsp. olive oil
  • 1 yellow onion
  • 4 garlic cloves
  • 3 tbsp. turmeric
  • 1 cup white wine
  • 3 quarts canned Great Northern beans with liquid
  • 1 quart artichoke hearts, roasted
  • 1 tbsp. black pepper
  • 4-6 quarts homemade veggie stock

Instructions

Place artichoke hearts in 350 degree oven, roast until caramelized. Add oil to hot stock pot, add yellow onion. Saute onions until they become caramelized and limp. Add turmeric to coat, garlic and white wine, stir. Add beans, artichokes, pepper and stock. Simmer 40 minutes.

This is a great comfort soup. Serve with hard crust bread and a glass of your favorite wine.
