Bacon wrapped chicken breasts with cream cheese filling

Ingredients 

  • 6 5-oz. boneless, skinless chicken breasts, pounded flat
  • 8 oz. cream cheese (regular, not light or fat free)
  • ¼ cup diced green onions
  • 1 tbsp diced red pepper
  • 2 tsp powdered ranch dressing mix
  • 6 slices bacon

Instructions

Bring cream cheese to room temperature. Mix cream cheese, green onions, diced red peppers and ranch mix together in a bowl. Return to refrigerator to chill 1 hour. Lay chicken breasts out on a cutting board. Scoop 2 tbsp of cheese filling into the center of each breast. Roll breasts up and place seam side down on board. Try to tuck sides in if possible while rolling. Take one piece of bacon and wrap it around each chicken roll. Place rolls into an oven proof pan. Bake at 375 degrees for 30-35 minutes or until the internal temperature is 165 degrees. Turn broiler on and crisp bacon about 10 minutes more. NOTE: Cooking times may vary! Serve with wild rice pilaf and baby sweet peas with dill butter. Try substituting chopped spinach, sun dried tomatoes, prosciutto or mozzarella cheese for any of the ingredients for something different!!
