Ingredients
  • 2 qt. garbanzo beans, canned, rinsed
  • 1 ea. red onion, sliced
  • 2 ea. green onion, sliced
  • 1/4 lb. fresh basil
  • 1/4 lb. fresh mint
  • 2 garlic cloves, crushed
  • 1 tsp. black pepper
  • 2 ribs celery
  • 2 ea. oranges, zest and juice
  • 1/2 c. almonds, toasted
  • 1/2 c. sunflower seeds, toasted
  • 1/2 lb. fresh spinach, chopped

 Vin:

  • 1/2 c. orange juice
  • 1 tbsp. brown sugar
  • 1/2 c. extra virgin olive oil
  • 1/2 c. balsamic vinegar
 
Instructions:
 
Combine all ingredients and toss. Chill 2-3 hours. Serve.
 
 
Yield: 9-12 servings healthy and salt-free
