Queso Enchiladas

  • 2 six-inch flour tortillas
  • 1 ounce cheese
  • 1 tablespoon green onions
  • 2.2 ounces specially seasoned chicken
  • 2 ounces Queso sauce
  • 1/4 ounce cilantro, garnish

    Sides:

  • 4 ounces prepared black beans
  • 3.5 ounces specially seasoned yellow rice

    Place two six-inch tortillas on a flat grill and add .5 oz of cheese (spread it around), 1/2 tablespoon of green onions and 1.1 ounces of chicken in the center of each tortilla. Once the cheese has melted and the tortilla has slightly crisped, roll the tortillas up and place on a plate with a side of rice and beans. Top the enchiladas with the queso sauce and cilantro garnish.
