Wine Down Lobster Salad Sliders

Ingredients

  • 2 pounds lobster meat, claw, knuckle, tail, very coarsely chopped
  • 2 cups mayonnaise
  • ½ cup sour cream
  • ¼ cup tarragon, chopped
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • zest of 2 lemons, finely chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 orange bell pepper, seeded and chopped
  • ½ vidalia onion, chopped (about ¾ cup)
  • 1/8 teaspoon celery seed
  • 6-8 dashes of Tabasco or Louisiana Hot Sauce
  • 24 2” X 2” slider buns (or white dinner rolls)

Directions

Mix all ingredients together and refrigerate for 2 hours. Place generous amounts of mixture on the slider buns. Serve with a small mixed green salad with a balsamic vinaigrette. Suggested accompanying beverage: white Sangria made with a white Spanish wine (similar to Casa Solar Viura).
