Ingredients (serves 1)
- 1 8-oz. skatewing, skinned and boned
- 4 slices thinly sliced pancetta
- 8-10 fresh green beans
- 1/4 cup small diced red skin potatoes
- 3 tbsp. unsalted butter
- 1 tbsp. lemon juice
- 2 toothpicks
- Salt and pepper, to taste
Sauce (serves 2-3)
- 1 cup white wine
- 3 tbsp. minced lemongrass (white part only)
- 2 tbsp. diced shallot
- 10 cracked black peppercorns
- 1/2 cup reduced heavy cream
- 1 tbsp. lemon juice
- 1 tbsp. unsalted butter
- Salt and pepper, to taste
To make the sauce
Cook white wine, black peppercorns, shallot, and lemongrass until almost dry, transfer to the mixing bowl. Whisk in reduced cream, lemon juice, and butter. Season with salt and pepper, strain.
Preparation
Preheat the oven to 500F. Place skatewing on the cutting board, put 2 pieces of pancetta in the middle of skatewing, fold one side of skatewing on top of pancetta. Place another 2 pieces of pancetta and fold the other side of skatewing on top, secure with 2 toothpicks. Place the whole potatoes in the pot and add cold water until covered. Add 1 tsp. of salt and bring to a boil until they are just cooked. Drain the potatoes, place them in the ice-cold water until they are cool. Cut the potatoes into small dice.
Cook the fish
Heat the oven-safe fry pan over high heat until hot, add 1 tbsp. of butter, place the skatewing (folded side up) and cook for a minute. Place the pan in the oven, cook for 4-5 minutes, turn the fish with fish turner, add 1 tbsp. of butter and cook for another 4-5 minutes or until the fish is cooked. When the fish is cooked, add lemon juice and set aside.
Cook the vegetables
Heat another fry pan over high heat, add 1 tbsp. of butter, green beans, potatoes. Season with salt and pepper and saute until cooked.
Serve
Place the green beans in the middle of the plate, then place the potatoes on top. Put 3 tbsp. of sauce over the vegetables. Place the skatewing on top and serve.
