Directions1.Cook pasta according to package directions; drain well. 2.Meanwhile, in a large skillet, melt butter over medium heat; add onion, and sauté 3 minutes, or until tender. Add cheese, and cook, stirring constantly, for 5 minutes, or until the cheese melts. Stir in sour cream, blending well. 3.Stir in tomatoes and pasta; cook, stirring constantly, for 5 minutes, or until thoroughly heated. OPTIONS: To tame the spiciness, switch to regular prepared cheese product and mild diced tomatoes with green chilies. You’ll get all the flavor with just a slight kick.
