Cherry Coconut Zucchini Bread Popular Among Family, Friends
So when her sister gave her a recipe for pineapple zucchini bread last summer, the Portage woman decided to modify it somewhat.
She added cherries and came up with Cherry Coconut Zucchini Bread, a recipe she said receives rave reviews from family and friends.
"I decided coconut and cherries would be good in it," Chernicky said. "It came out delicious."
The recipe uses eggs, lemon and cherry juice, zucchini, nuts, vanilla pudding, a jar of cherries, flaked coconut and pineapple, among other ingredients.
It's a different twist on ways to use the abundant summer vegetable.
Chernicky said she has made extra to put in the freezer.
"Everyone loves it, especially my one grandson," she said.
Cherry Coconut Zucchini Bread

1/3 cup oil
1/3 cup lemon juice
1/3 cup cherry juice
2 1/4 cup sugar
3 tsp. vanilla
2 cup zucchini
1 cup nuts
