The Alpine Springs Restaurant just below High Alpine lift at Snowmass, Colorado is my favorite place to pause from skiing. George who manages the restaurant serves up this great burger. It is best to wait for spring skiing and sit outside watching your burger being fire-roasted on the outdoor grill. I modified the recipe to make this a healthier version. Pineapple, Swiss cheese and Thousand Island dressing make this burger a high Alpine experience!
Ingredients:
1 soy veggie burger
1 whole-wheat burger bun
1 slice pineapple
1 slice onion
1 slice fat free Swiss cheese
1 T fat free Thousand Island dressing
1 lettuce leaf
3 T vegetable broth for sautéing
On a medium grill or grill pan, oil sprayed, grill the burger and pineapple. Use the vegetable broth to keep the burger from drying out. Place the grilled burger, pineapple, Swiss cheese, onion and lettuce leaf on a bun. Top with Thousand Island dressing.
Nutritional analysis: One burger.
