  1. Curry braised lamb shanks

Nothing takes the chill out of January like a house filled with the aroma of slow-cooking goodness. In our house, that aroma frequently includes a touch of curry spice. On braised meat, on roasting veggies and simmered in a pot of stew or soup.

  3. Timing a tenderloin

Q: I have been cooking beef tenderloin with Madeira sauce from the Dec. 3, 2003, Trib for several years. My question is: Could I make it up to the point where I make the sauce then refrigerate it? Then, prior to serving, bring to room temp and finish it off?

So when should you use fresh herbs in a recipe? And when do you go for the dried? It can be a perplexing question, especially if the recipe is not specific.

They work in completely opposite ways, but they both succeed in producing a hot, hearty meal in quick fashion. One is the slow cooker, the other is the pressure cooker, and they both have been helping cooks for decades.

  13. The gnarly beauties of fall

OK, I'm over it now: Summer veggies from the farmers market are no more. I've stopped lamenting the absence of local corn and garden-fresh tomatoes. If I shift my cooking methods just a bit, I can embrace the bounty of cold-weather veggies.

  19. Finding sandwich bliss

Saltie is a sandwich shop, about as big as a saltbox, in Williamsburg, Brooklyn. I ate there in April 2011 and still think about the sandwiches my companions and I sampled and shared. We tried the Captain's Daughter, whose combination of top-shelf sardines, house-pickled eggs and an herby salsa verde add up to a wildly delicious sum. The Clean Slate, which unites the familiar hummus and quinoa in a unique way with fresh sauerkraut, yogurt sauce and sesame seeds, woke us up with a far-from-mundane version of a healthy sandwich.
