7. Recipe: Cambodian-Style Amok Fish

For a pretty presentation, the restaurant turns a frozen banana leaf into a boat shape in which to steam the fish. The home cook can try folding the leaf into a boat (see step-by-step photos, above, for folding directions) or can simply line a heat-proof bowl with a double thickness of banana leaf and fill it with the fish mixture for steaming. Either way, you will get the flavor and aroma of the banana leaf. Serve with Sticky or Sweet Rice (recipe given). You can also make this recipe with chicken breasts or tofu instead of seafood.

  9. Learn to make Cambodian-Style Fish Amok Step-by-Step

Fish amok is a traditional Khmer or Cambodian dish. It's not only attractive but tastes and smells tempting. It's fish mixed with a coconut curry sauce and steamed in a boat made origami fashion from a banana leaf. The sauce firms up to form a rich, velvety custard layer over the seafood and napa cabbage. The banana leaf adds its own fragrance and flavor to the experience.

  11. The Find: Merry's House of Chicken

There's a glistening chicken somewhere under the blanket of crispy rice-flour crumbles. The crystalline snowflake-like particles are scattered over the entire bird, its skin sluiced with a squeeze of lime and spiced with a dab of sambal, shrimp paste and chiles ground into a pungent, penetrating blast of heat.

  17. The talk of Thai Town

Amound of fragrant jasmine rice arrives at the table piled high with a montage of slivered green mango, sliced lemon grass, finely cut green beans, bean sprouts, cucumbers and shredded carrots and cabbage. It's sprinkled with julienned kaffir lime leaves, ground dried shrimp and chile powder and served with a small bowl of sweet-salty budu sauce and a wedge of lime. The hostess comes to the table and with a large spoon tosses the whole fabulous salad together, telling you that her naam budu is made in-house with anchovies, herbs, lemon grass and garlic, and that you have to use all of the sauce that's given to you, along with a squeeze or two of lime, to get the right balance of flavor.

IN the old days, this was a swell place to be a pirate and a terrible place to be a witch. That was back when this wind-scoured Caribbean port was a hub of the Inquisition and the Spanish Empire's gold trade in the New World. Between 1610 and 1811,...

  23. Keen on quinoa
