Flourless chocolate cake
9 ounces(oz) dark chocolate
3 oz butter
3 egg yolks
3 egg whites
1/4 cup sugar
- melt choc and butter together just until it's a uniform mixture. Make sure it's not hot to the touch. Just warm
- mix yolks into choc mixture and whisk
- whip egg whites with sugar to medium peak
- fold choc mixture into meringue
- spread into baking dish half way up and bake at 325 until a toothpick can be drawn out clean


Chocolate mousse
12 oz choc
7 oz butter
4 egg yolks
9 oz heavy whipping cream
- melt choc and stir butter in until it's a smooth mixture
- whisk the yolks into the chocolate mixture
-whip the heavy cream to medium peaks then fold into the chocolate


Fruit compote
8 oz of Fruit (rasp, blackberry, strawberry, mango)
1 oz water
1 oz sugar
- mix everything together in a pot and boil for 1-2 minutes or until it thickens up like a jam
