Smoked Brisket Sliders

 

Rub Recipe:

2 lb brown sugar

½ cup chili powder

 2 tbsp mustard powder

 2 tbsp Onion Powder

 2 tbsp Garlic Powder

 1 tbsp Cayenne Pepper

 ½ cup Kosher Salt

 2 tbsp Black Pepper

 1 tbsp Nutmeg

 4 tbsp Ground Coffee

Season brisket on both sides with rub and let sit overnight in refrigerator.

Pre-heat smoker to 225 degrees.  Once preheated, place brisket in smoker and cook for 10-12 hours. Remove from smoker and let rest for 30 minutes.  Slice brisket to desired thickness. Note: If a smoker is unavailable, cook in oven, covered at 250 degrees for 8-10 hours.

 

Crab Dip

 

4 lb crab

2 lb cream cheese

8 oz red onion, minced

8 oz bell peppers, minced

2 oz chopped garlic

1 tsp white pepper

3 oz spinach, chopped

8 oz artichoke hearts, chopped

1 lb sour cream

8 oz mayonnaise

3 oz chipotle peppers, pureed

2 oz lobster base

 

Combine all ingredients with a mixer excluding the crab until a smooth consistency is achieved.  Once consistency is smooth, add crab and mix by hand to incorporate the crab.  Bake in a casserole dish or set crock pot on low.  Top with parmesan cheese or toasted breadcrumbs.
