There's nothing quite like the cool and refreshing taste of mint on a scorching summer day. My favorite summer salad is made with this dressing tossed with romaine lettuce halved fresh strawberries, halved grapes, and toasted slivered almonds. You can make this dressing using fresh mint from your garden, it can be purchased at your local farmers' market or in most supermarkets.

¼ cup white rice vinegar

2 tablespoons canola oil

3 tablespoons honey

2 teaspoons minced fresh mint

Salt and freshly ground pepper to taste

Whisk together all the ingredients in a small bowl. Taste and adjust the seasoning.

Whisk or shake before serving.

Advance preparation

This dressing will keep for up to 4 days in a tightly closed container in the refrigerator.
